John O’Riordan is a veteran chef himself,  whose career highlights include stints as Chef de Partie at Harvey Nicholls London, Executive Chef at Doltone House, Sydney plus establishing Grappa (the first hatted restaurant in Norton Street, Leichhardt). With a wealth of experience and and an enviable roster of chefs, he brings years of commercial kitchen wisdom to the placement of staff.

John’s 18 years of success have taught him a few things about matching skill sets with different styles of operations and he has focused on recruiting chefs who are multi talented and adaptable. The roster features chefs with both international and local experience like Tobias Horsch, who trained in Michelin starred restaurants in Hamburg, Le Cordon Bleu trained Bernie Lin and world renowned pastry chef, Vincent Gadan.
