Chef Vincent Gadan: As Sweet As It Gets!

It was love at first sight when pastry chef Vincent Gadan stepped onto the shores of Sydney Harbour for the first time back in 1988 during a mandatory military service stint in the French navy. The pastry specialist who served his apprenticeship and honed his skills in France was blown away by the city which was like nothing he had ever seen. He describes the moment as feeling like he was “home”.

Vincent returned to France after that visit but his fascination with Sydney remained. In the following years he took out major culinary prizes and worked in a number of Michelin and hatted restaurants. He also built a justifiably enviable reputation for being the man when it comes to pastry.

At the very top of his game, the urge to return to Australia become impossible to ignore and in 1993 Vincent decided to follow his dream and head to Oz.

The road to success down under wasn’t an easy one. It took a lucky break landing a gig at Sydney’s Ritz Carlton Hotel to kick start phase two of Vincent’s career but from that point on he didn’t look back. Working in some of our most iconic establishments, such as Bennelong at the Sydney Opera House and Patisse, he became one of Australia’s most recognised and lauded Pastry Chefs. He has featured on TV shows such as Masterchef for Channel 10 and French Food Safari on SBS and has written a number of well received cookbooks.

Vincent has never been afraid to push his technical and artistic skills to their limit.

There have been some incredible creations along the way including the fabled “Australia’s most expensive desert” featuring 24-carat gold leaf and 60 Kimberley Diamonds valued at around $500,000 and a Harley Davidson modelled from over 130 separate pieces of sugar that took over three months to construct, a labour of love and replica of his own bike that he sold before he left France.
